ABSTRACT : Improve food security and competitiveness of SMEs involved in food processing through the design and implementation of quality systems: Hazard Analysis and Critical Control Points. To consider food security as a fundamental aspect of public health: - Reduce the risk of diseases transmitted by food, - Ensure the effectiveness of control systems for food, - To promote the consumption of healthy foods. That is providing citizens full confidence in the food they consume. And also, to promote an industry that sees food security as a competitive strategy DESCRIPTION: The action consists of the design, adaptation and implementation of a control system for food safety to strengthen the quality of food in countries benefiting from the action. The action seeks to: * Ensure the health of citizens by preventing diseases transmitted by food contamination, the most common are those produced by Salmonella and E. Coli, Listeria and Staphylococcus. * Provide a set of conceptual tools (guides, manuals and procedures) that specialize in quality systems, and training (workshops, seminars, etc.) in the processes that affect the handling of food.
